I had these at a friends bridal shower and they were PURE EVIL. I begged for the recipe and got it reluctantly as Becky swore to her uncle she would never divulge it. She said it was okay to give it to us since he lived on the West coast and we lived on the East coast.
I love these brownies and they are NOT for the faint of heart.
Rocky Road Bars
Bar Ingredients
½ cup Butter (or margarine)
1 square Unsweetened chocolate (3 TBS Cocoa+1 TBS Oil=1 sq unsweetened chocolate)
1 cup Sugar
1 tsp Vanilla
2 Eggs
1 cup Chopped Nuts
1 tsp Baking Powder
1 cup Flour
Preheat oven to 350 degrees. Grease and flour 9x13in pan. In large saucepan melt ½ cup butter and 1 square of chocolate over low heat and cool. Mix sugar, eggs and vanilla together. Add cooled chocolate mixture and then the flour mixture. Spread evenly in the pan.
Filling Ingredients
8 oz Cream Cheese (Save 2 oz for the Frosting)
½ cup Sugar
2 T. Flour
¼ cup Butter Softened
1 Egg
½ tsp Vanilla
¼ cup Chopped Nuts
1 cup Chocolate Chips
Marshmallows
In small bowl combine 6 oz. cream cheese, butter and sugar. Add egg and vanilla. Blend until smooth and fluffy. Add flour and mix. Stir in nuts and chocolate chips. Spread over Bar Mixture. Bake 25 to 35 minutes until toothpick inserted in center comes out clean. Sprinkle with marshmallows. Bake 2 minutes longer.
Frosting Ingredients
¼ cup Butter
1 Square Unsweetened Chocolate
2 oz. (from filling) Reserve Cream Cheese
¼ cup Milk
3 cups Powdered Sugar
1 tsp Vanilla
In large saucepan melt ¼ cup of butter, 1 square chocolate, remaining 2 oz cream cheese and milk over low heat. Stir in powdered sugar and vanilla. Blend until smooth (will need a Wisk). Immediately pour over marshmallows. Swirl together using a butter knife. Store in Refrigerator. Cut into bars.
