Short Ribs With Tagliatelle

Giada's Tagliatelle
•3 tablespoons olive oil
•2 ounces chopped pancetta (about 1/2 cup)
•2 1/2 pounds short ribs
•Salt
•Freshly ground black pepper
•1/4 cup all-purpose flour
•1 medium onion, chopped
•1 carrot, chopped
•1/2 cup fresh parsley leaves
•2 cloves garlic
•1 (14-ounce) can tomatoes (whole or diced)
•1 tablespoon tomato paste
•1 teaspoon chopped fresh rosemary leaves
•1 teaspoon dried thyme
•1/2 teaspoon dried oregano
•1 bay leaf
•2 1/2 cups beef broth
•3/4 cup red wine
•1 pound fresh or dried tagliatelle
•4 to 6 teaspoons shaved bittersweet chocolate
Directions
Place the olive oil in a large heavy soup pot over medium heat. Cook the pancetta until golden and crisp, about 4 minutes. Meanwhile, season the short ribs with salt and pepper, and dredge in the flour. Using a slotted spoon, remove the pancetta from the pan and set aside. Add the short ribs to the pan and brown on all sides, about 7 minutes total.

Meanwhile, combine the onion, carrot, parsley and garlic in a food processor and blend until finely minced. Then add the tomatoes and tomato paste and pulse.

Once the short ribs are browned, carefully add the mixture from the food processor to the pot. Return the pancetta to the pot and stir. Add the rosemary, thyme, oregano, bay leaf, beef broth, and wine. Bring the mixture to a boil. Reduce the heat and simmer, covered, for 1 hour and 15 minutes. Remove the lid and simmer for another hour and a half, stirring occasionally. Remove the meat and bones from the pot. Discard the bones. Shred the meat and return it to the pot. Season with 1/2 teaspoon salt and 3/4 teaspoon pepper, or to taste.

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes for dried pasta and 2 to 3 minutes for fresh. Drain the pasta, reserving 1 cup of the cooking liquid. Add the pasta to the pot and stir to combine. Add the reserved pasta liquid 1/4 cup at a time, if

needed, to moisten the pasta. Transfer to serving bowls, top each bowl with 1 teaspoon of chocolate shavings. Serve immediately.

Apple Crostata

I tell you what Barefoot Contessa knows what she is talking about. This is a beautiful recipe.

Apple Crostata
Serves 6

For the pastry:
nocoupons
1 cup all-purpose flour
2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
For the filling:
nocoupons
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced
Directions
For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.

Preheat the oven to 450 degrees F.

Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.

For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.

Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.

Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

Garlic Roasted Potatoes

3 pounds small red or white potatoes
1/4 cup good olive oil

Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

Zucchini Chowder

I had this at one of our girls night out. It was delish and perfect for a crisp Fall day.

Zucchini Chowder

2 Zucchini
1 Onion
2 TBS Minced Fresh Parsley

1/3 cup better

Boil-Reduce Heat-Cook 5 Min

Add:
1/4 cup Grated Parmesean Cheese
2 cups Shredded cheddar Cheese
Pinch of Sugar

Stir in, melt, serve immediately

Apple Cake

I can't say enough good things about this apple cake. We hosted a playgroup potluck and Tiffany contributed this and this is how Fall should taste.

Cake

1 ¼ cups canola oil
2 cups sugar
3 eggs
3 cups flour
1 t. baking soda
1 t. salt
1 t. cinnamon
2 t. vanilla
3 cups chopped, peeled apples
1 cup chopped pecans (optional)

Mix the first three ingredients together well. Add the remaining ingredients and mix until well blended. Pour mixture in a well-greased Bundt pan. Start the cake in a cold oven that has been turned to 350 and bake for 45-60 minutes. The bake time will be dependent on the heat of your oven, of course, but also on the moisture content of the apples you use. Let the cake stand for at least 5 minutes before removing it from the pan.

Icing

1 stick butter
1 cup brown sugar
½ can sweetened condensed milk

Boil all the ingredients together and serve over the warm cake
